That’s right! A whole day dedicated to everyone’s favourite summer fruit (or vegetable if you’re in Oklahoma!) and what better way to celebrate this bizarre, yet incredibly appropriate national day than with a refreshing Watermelon mojito?

With this easy to follow recipe, you’ll be enjoying a delicious watermelon cocktail in no time at all!
Watermelon Mojito Recipe
(Makes 4 drinks)
1 bunch of mint leaves, chopped (reserve some sprigs for decoration)
1 ½ tablespoons superfine sugar
½ cup freshly squeezed lime juice
¾ cup light rum
½ seedless watermelon (cut into chunks and pureed)
In a large shaker, combine mint, sugar, and half the lime juice. Crush the mint with the lime juice until the sugar is dissolved. Add the remaining lime juice, watermelon puree, and rum, stir to combine.
Strain into the glass of your choice over ice and decorate with a sprig of mint!
